And suddenly your princess stops eating yogurt! Oh yes… we have these periods often, when my princess does not want to taste yogurt at all! Another period is when she does not want to eat her fruits! I do not know if this is because of the heat (hot Summer so far) but again no yogurt and no fruit is not something acceptable… and you start using your imagination!
You are in home relaxing (ok I know this is not something that happens often…) and a friend calls you…to come for a coffee! Shops are closed (it is Sunday , you know!) and you do not have anything to offer! Hmm…. let’s see….
And then they are these days in woman’s life that you desperately need something sweet but on the other hand you do not want to eat so much sugar and “destroy” your diet (still Summer…)! Any ideas??? Oh yes… I opened the refrigerator and I was wandering how to offer yogurt to my princess without hearing once more her whining, what to offer to my friends and what I shall eat… light above my head…idea! What about a small easy to make sweet type of cheesecake but without much sugar and so healthy?
Ingredients: – Greek Yogurt – Biscuits ( I have used Miranta) – Peach Compote – Dried Fruits ( I have used cherry, blue berries and black currants) – Jam or Honey
The procedure is really easy. Just smash the biscuits in small pieces and put them on the bottom of your small glasses. In a bowl combine yogurt with dried fruits and the peach and add it above your biscuits and let it cool in the refrigerator. You do not have to wait long, ten minutes are more than enough. Serve it with jam or honey or without anything. And guess… it is yummy and my kids love it!
